Summer potato salad is a potato recipes for every day snacks and it makes a great side dish during the holidays . Begining with new potatoes in potato recipes will satisfy every appetite at your table. This mealis made usingsalad dressing instead of mayonnaise, including celery, red onion, scallions and paprika .
Ingredients:
• 3 lb small red potatoes
• 2 boiled eggs
• 2 tomatoes
• 2 large stalks of celery, sliced
• 1 cup of dressing
• 1 scallion, use only a small portion to taste
• 1/2 teaspoons of Dijon mustard
• 2 tablespoons of red onion
• 1 tablespoon of salt
• 1/4 teaspoon of red paprika
how to make:
chopthe potatoes into fours; putthe eggs on top of the potatoes in a large pot . Cover with water and bring to a boi . Boil potatoesfor 25 to 30 minutes; test them by piercing with a knife. Do not undercookthe eggs; remove the eggs after 3-4 minutes.
Drain the water and let the potatoes cool , peel the boiled eggs . Rinse the potatoes under cool running water ; slice the eggs.
In a large bowl , put the potatoes and dressingwith the celery and red onion . When completely mixed, add in the other ingredients, dont use too many of the green scallions or Dijon mustard .
At the end, mixin the eggs and then lightly sprinklewith a layer of paprika. Cut the Roma tomatoes into thin slices and arrange in a pattern atop the potato salad.
